• 1kg of cooking apples (cored, peeled and diced)
  • 100ml of Barti
  • 200ml cider vinegar
  • 1 tbsp of ground cinnamon
  • 1/2 tsp of grated nutmeg
  • Pinch of ground cloves
  • A few drops of vanilla extract
  • Zest and juice of 1/2 an orange and lemon
  • Pinch of ground ginger
  • Pinch of salt
  • 3tbs sugar



OK so this isn’t a drink recipe, rather a recipe for an ingredient in a different drink recipe – our Autumn Apple Rum. It’s also not butter despite the name, it’s American inspired and basically it is pimped up apple sauce. I hope we’re not losing you cause once you’ve made it, you will be obsessed! Which is just as well because you can practically live off it, morning, noon and night until Christmas.

Place all the ingredients into a thick bottom pan and allow to cook slowly for around 30 mins or until all the apple pieces are easily mixed into a sauce. Place the mix into a food processor and return to heat for another 20 mins, allow to cool and place in jar or any container, and store refrigerated. It will keep well thanks to the sugar and acidity. Phew now that’s none you can knock up an Autumn Apple Rum. (It’s also great with porridge, French toast, cold meats and sandwiches.)
