Barti Apple Pie (West n Stormy version)

As it starts to blow out West, the nights start creeping in and the leaves turn golden brown, there's only one thing everyone should be doing right now and that is to make a Barti Apple Pie.

Ingredients

For the Pastry

Easy life - buy in ready rolled short crust pastry
Wannabe chefs:
200g of plain flour (extra for back up)
100g cold salted butter (cubed)
50g caster sugar
1 TSP of ground ginger
Zest of ½ a lime
1 pinch of sea salt
1 egg beaten and keep some back for glaze

Ingredients

10 cooking Apples (peeled, cored and sliced)
1 TSP of butter
50g Golden Caster Sugar
70g Dark Brown Sugar
100g of crystallised ginger (sliced)
1 tbsp of plain flour
1 TSP of diced fresh ginger
Pinch of ground ginger
Pinch of cinnamon
75ml of Barti

Method

If making pastry, then place all the ingredients into a food processor and pulse until combined
Then remove pastry, wrap and chill for at least 30 mins
While pastry is chilling, place a very large frying pan on medium heat and add the butter, sliced apples, sugar and spices to the pan and cook until apples have soften and coloured
Then add the rest of the ingredients and allow to cool.
Heat oven to 180C and find a lovely pie dish and grease with butter
Roll out ⅔ of the pastry and line your pie dish.
Fill with apple filling and top with the rolled out left over pastry, crimp and glaze with the leftover egg.
Cut a few slits in the top to allow the steam to flow out, brush with egg and dust with sugar
Place in oven for around 40 mins or until pastry is golden
Serve with Barti infused whipped cream.
Sit back in a cosy sofa and enjoy these fine autumn days.
